CHOCOLATE CAKE

INGREDIENTS:

1/2 cup oil
1/2 cup boiling water
1 cup flour
1/4 cup cocoa
3 tsps baking powder
4 eggs
1 cup sugar
1 tsp vanilla essence
Mix oil and water and leave aside to cool
Sift flour, baking powder and cocoa
Beat eggs, sugar and vanilla till super white and fluffy
Fold/whisk in flour and water mixture alternately until well incorporated
Pour into prepared tin
Bake @180C for 20 – 25 minutes or until done

CHOCOLATE ICING:


1 cup softened butter
1/2 cup cocoa powder sifted
5 cups powdered sugar
1 teaspoon vanilla
3-4 tablespoons milk

METHOD:

Whip butter and cocoa together until smooth in large bowl. Stir in vanilla and powdered sugar. Slowly stream in milk until frosting reaches desired consistency. Scrape sides and whip again until light, fluffy and smooth, 1-2 minutes.
